round up of good eats

here's some veggie-filled food i've been making to take advantage of my hauls from the farmers market.  throughout the semester, i've made many more dishes/salads/soups that scream "VEGGIE OVERLOAD" but alas, i don't actually carry a camera around everywhere...
summer squash, green beans, peppers and pesto stir-fry
roasted brussel sprouts = charred crunchy deliciousness
a recent favorite is brussel sprout "chips," (a distant relative of kale chips) in which i toss 3 cups of brussel sprout leaves with a little vegetable oil, pesto, and salt, and roast for 12 minutes at 400 deg.  i love how the crispy ones taste, so does emily! :)
