when i found out that we were going to have a kitchen in our
apartment this year, i was super excited to be able to use the oven. for two
years we have talked about baking, but have never had an oven of our own to use
whenever we wanted. this summer, i spent a month at home with nothing in
particular to do. so i began looking at recipes that would be easy for me to do
at school. two recipes that i made and immediately baked when i got here were: carrot & zucchini muffins and granola & applesauce morning muffins. by using a
small muffin tin, i have made bite sized treats for us to snack on throughout
the day and night. in light of my healthy eating challenge, this is the best
way to manage my portions.
