my favorite little veggie

meet my new favorite vegetable: the acorn squash. and i have the easiest, most delicious way to cook it to share with you all!  it tastes like dessert almost, but a serving of veggies must cancel that out somehow...

cut in half
scoop out seeds and place both halves in a foil-lined pan
dot with butter and brown sugar (about a tablespoon of each)
bake uncovered in 425 deg F oven for 35-40 minutes or
until flesh is tender when prodded with a fork
demolish!
it's so darn tasty! and definitely an easy way to consume more veggies.
