gettin' my protein

last week i made the best bread known on earth.  yes, it's a "high-protein bread," but it's delicious nonetheless.  it doesn't even need a topping, so put that butter/jam/jelly/peanut butter away, because this bread tastes sooooo great on its own!  also, this bread was a good choice to make on a tuesday night, because i still had time for homework -- as the bread rises, twice!  it's a little time-consuming, but trust me, it's worth it!

the ingredients list is a bit lengthy.  i had to make a special trip to get honey, cottage cheese, and rapid-rise yeast  (yes, cottage cheese, so thanks lauren for finishing that up... i wouldn't touch that stuff on its own with a ten-foot pole).
when my mom makes this at home, she bakes two loaves at 9''x5'', but alas, i could only find 8''x3.5'' pans.  but it feels like you have more bread.  also, it gets pretty dry if you leave it out, so freeze it in ziploc bags, and enjoy!  this post is somewhat of an inside joke between emily and me, since our moms always ask us if we're getting enough protein.  i wouldn't mind having this bread all the time to fill my protein quota everyday.  :)
